I've been feeling a lot like Miranda Lambert lately, domestic! She recently told Pulse of Radio that holidays really get her into full on baking mode--ME TOO.

I've been trying some new recipes this year and I must admit, I'm impressed! I made Twix cookies and caramel fudge the other day and my husband hasn't been able to put them down. So, I thought I'd share my recipes with you in hopes that you'll enjoy them as much as we have! Merry Christmas and happy baking!

Twix Cookies

Ingredients:

  • 2 eggs (yolks only)
  • 1 1/2 cup flour
  • 6 ounces of milk chocolate chips
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2/3 cup of butter
  • 3 tbsp heavy cream
  • 14 soft caramel candies

Step 1:

You'll want to make the cookie part first. It's just your standard short bread cookies...that's it. Preheat the oven to 375 degrees. then, in a bowl combine 2/3 cup of butter, sugar, egg yolks and vanilla. I use my Kitchen Aid Mixer for this part and it works wonders. You'll want the mixture to be creamy and smooth. Next, just add your flour into the creamy mixture. Mix this up really well. The dough should feel almost sticky when you're done with it. Put the mix into the fridge for about 30 minutes.

Step 2:

Roll your dough with your hands into 1-inch balls. Place them on a parchment paper on your cookie sheet. Press your thumb into the middle of the cookie or use a spoon to do this since the mixture is a little sticky. Put in the oven for about 7-10 minutes.

Step 3:

Melt caramel and heavy whipping cream on the stove top. When the cookies are completely cook, add caramel into the center thumb print.

Step 4:

Melt your chocolate chips on the stove top, then take a spoon and drizzle the chocolate on top of the cookie.

That's it! It's so simple and the cookies are super good!

Caramel Fudge Recipe

Ingredients:

  • 25 caramel candies
  • 3 cups of milk chocolate chips
  • 2 tsp vanilla extract
  • 1 can condensed milk, sweetened
  • 2 tbsp heavy cream

 

Step 1: Line an 8x8 pan with parchment paper...you need to do this if you want to be able to ever get your fudge out of the pan...Then combine the chocolate chips and the sweetened condensed milk in a pot on low on the stove top. Melt the two together and then stir in the vanilla extract. Pour the mix in your pan and smooth the fudge.

Step 2: Unwrap the caramels and place them in a pot on low on the stove top. Next, add in the heavy cream. When this is completely melted and stirred together, add this layer on top of your fudge layer.

Step 3: Refrigerate and let the fudge harden overnight. Store the extra fudge in the fridge to keep the caramel from getting runny.
