I've lost a total of 25 pounds so far this year and people keep asking me what I've done differently to lose the weight and keep it off. I've got a super busy schedule and for a very long time I found it hard to eat healthy because it wasn't convenient. I also have zero time to do food prep each week. So, I've figured out a few quick go-to meals that make dieting and cooking easy on me--and they taste amazing too! On a typical night, I usually have; shrimp, brown rice and a side of bruschetta or broccoli. Seasoning my meals and buying fully-cooked shrimp have been real game changers for me. 

Prep time: 2 minutes, Cook time:10-15 minutes

1. Shrimp--I buy one package of fully-cooked shrimp from the grocery store. It typically costs me about $9 for a bag--it makes about three meals for me. I make my shrimp on the stove top in a pot on high heat for about 10 minutes. Since it's already fully cooked, you just need to heat it up. Most sauces aren't healthy and will just add unnecessary calories, so, I use lemon juice, lime juice, parsley, a little bit of garlic seasoning and a hint of olive oil. I don't measure anything out, I just add in what I think is right.

2. Brown rice--I buy individual cups of prepackaged microwavable brown rice. I typically don't have time to make the rice in a pot. Plus, I hate doing dishes. I heat my brown rice in the microwave for one minute and mix in a pinch of cilantro--that's it and it's done! I love the prepackaged rice because it's easy to measure out and keep track of your calories.

3. Bruschetta--It's kind of like a salsa and it's next to the salad section at the grocery store. It costs about $3-$4 a package and lasts me about a week. It adds so much flavor to the rice! Plus, it's super healthy and low calorie!

Honestly, you can make this meal in half the time it would take you to get in your car and grab take-out. It's healthy and you'll feel full after eating it! That's a win-win!
