My mom and I have been trying to spend more time together since I've moved back to Minnesota. We thought that we'd start making some recipes and sharing them with you.  Mom and I made these individual cobblers on Sunday afternoon, and then we proceeded to eat them. Oh my...They were SO good! Here's the recipe.  We hope you enjoy them as much as we did.

  • 1 cup fresh rasberries
  • 1/4 tsp almond flavoring
  • 2 tbsp butter
  • 4 tbsp sugar
  • 1/2 cup flour
  • 1/4 cup sliced almonds
  • 1/4 cup milk
  • 1/4 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 warm water

Prehead the oven to 350.

Divide rasberries evenly into 4 Ramekins dishes, and save four berries for garnish.

In a bowl mix the following ingredients:

  • butter
  • 2 tbsp sugar
  • flour
  • milk
  • baking powder
  • almond flavoring
  • salt
  • vanilla

Divide the butter evenly among 4 Ramekins.

Mix remaining 2 tbsp sugar and 1/4 cup warm water.  Spoon evenly over each Ramekin.  Sprinkle with sliced almonds.

 

Put Ramekin dishes on a cookie sheet.

 

Bake 28-30 minutes until topping is brown and fruit is bubbling.

 

Serve warm with whipped cream or vanilla ice cream, and top with rasberry.  Enjoy!
