Even though it was super gloomy yesterday, my boyfriend and I were determined to fire up the grill! He made burgers and I attempted a new salad that is going to be my go-to for any picnic or pot luck from here on out!

Mexican Street Corn Salad

  • 2 cans of Green Giant Mexicorn (canned corn with red and green bell peppers, see picture above)
  • Mayo
  • Parmesan cheese
  • Chili powder
  • 1 Lime

In a large bowl add the drained cans of mexicorn, a generous amount of mayo (I used about a cup), some Parmesan cheese, and a sprinkle of chili powder. Mix it all together and let it sit in the fridge for about an hour. Gotta give the flavors time to love each other!  Before serving add the juice of half of a lime and make sure it is well stirred.

This is a super simple salad, no cooking noodles, no exact measurements, no extra steps! It will be a hit at all your neighborhood picnics this summer!
