Every weekday morning at 8 a.m. we'll be visiting with a local restaurant operator to find out how they are doing during the pandemic. We'll check-in and find out what specials they're running, how you can order for delivery, take-out our curbside pickup.

Today, were joined on the show by Maddy Waseka with The Copper Lantern Family Restaurant in St. Cloud.

They're closed for dine-in service like all other bars and restaurants in Minnesota, but they're open for takeout and curbside pickup.

Waseka says, "We're trying a couple new things to kind of adjust … We're offering breakfast from 8 to noon right now. We're doing a buy one get one half off omelet. "

They've also started offering up family meal deals, something the restaurant started a few weeks ago. "We rolled this out for Thanksgiving and it was super successful … we got a lot of feedback from it saying it was well received," said Waseka.

The family meal deals are fully cooked, ready to eat once you reheat dinners, "they're 'a little more upscale than what we're used to," she added.

Each week, they feature a different family dish. Last week was a lasagna entrée served with a Cesar salad and paired with wine.

This week's deal includes some home-style comfort food. You can get BBQ pork ribs, homemade mac & cheese, green beans, corn bread and strawberry shortcake. The meal costs $35 for two people and $65 for four people.

If you're interested in ordering the meal deals, they're announced weekly on Facebook. You must place your order by the end of the day Thursday for a Friday pickup between 4 p.m. and 6 p.m.

In the future, they'd like to roll out some homemade soups and maybe even pies, Maddy said. Right now, they're working on a more scaled back menu with a focus on breakfasts foods, "because that's what we're known for," said Waseka.

She continued, "I really just hope people come out to support small businesses. We would love to do some collaborations in the future, maybe something different with liquor stores to do some pairings with meals...so definitely keep an eye out for that."

You can order gift cards from the restaurant and use them as gifts during the holidays or save them for when Copper Lantern is open again for dine-in service.

They're looking into offering up a third party delivery service, but right now you can call in your order or place it online and opt for contactless pickup.
