Many Minnesotans are practicing self-isolation as the state (and the world) continues to fight the spread of COVID-19. I'm missing the little delights of every day life...like, the soft and salty taste of a mall pretzel. Seriously, how I miss walking around the mall on the weekend with a soft pretzel in hand.

It's the little things in life. So, I decided to make it my mission to figure out how to make a mall pretzel, and to my surprise, it worked!

If your kids are missing the tastes of the mall, make this super easy soft pretzel recipe with them and it'll lighten up the mood in your house. My two-year-old couldn't get enough of these.

Here's what you'll need;

  • 1 package of dry yeast
  • 1 cup of warm water
  • 2 tablespoons of softened butter
  • 1 tablespoon of brown sugar
  • 2 1/2 cups of flour
  • 1/4 cup of baking soda
  • Nonstick cooking spray

Directions;

Add your yeast and water into your kitchen aid mixer. Let that sit for about 2 to 3 minutes. It should start bubbling up. Next, add in the butter, brown sugar and flour. Stir it with your dough hook.

I stirred this baby for like 5 minutes until the dough started to pull apart from the side of the bowl. It should be firm and not too sticky. It should remind you of pizza dough.

When your dough is ready, place it in a warm place for 20-30 minutes and let it rise. While that's rising, preheat your oven to 450 degrees and start boiling your water.

Next, grab your dough, punch it down and divide it into 8 equal parts. I used a pizza cutter for this part. Then, start rolling out your dough into a long rope-like shape. Fold your rope into a pretzel and set aside. Do this for all 8 pieces.

When the water starts to boil, add in your baking soda. Then, boil each pretzel for 30 seconds. I timed it out on my oven clock. Make sure to let the excess water drop off the pretzel.

Next, spray your baking sheet with nonstick cooking spray and place the pretzels on the pan. They should hold their shape pretty well.

Bake these babies for 10-12 minutes...and that's it. You'll have delicious soft pretzels that will taste like they came from the mall.

This is such a fun and easy recipe to do with the kids while you're stuck at home, and afterward, you've got a delicious snack. Spice up this recipe by adding cinnamon and sugar sprinkled on top. It also tastes delicious with a frosting glaze!
