Central Minnesota is feeling a little brisk this week. Everyone could use a good cup of delicious hot soup. My favorite recipe to make when the weather is nasty is my mom's chicken noodle soup with dumplings. It's a match made in heaven. She also makes delicious homemade dinner rolls with it, but I haven't perfected that recipe yet.

I thought I'd share the love and let you in on my mom's amazing chicken soup recipe. It's food for the soul.

My mom always starts by boiling her chicken until it's fully cooked. You'll want about 2 pounds of chicken for this recipe.

Ingredients for chicken soup

  • 2-3 large carrots
  • parsley
  • 6-8 chicken bullions
  • 8 cups of water
  • salt and pepper
  • 4 celeary stocks
  • 3 garlic cloves
  • 1 onion
  • (you could add in mushrooms too)

Directions:

in a large pot, boil your chicken (I use chicken breasts without bones to make it easier) in water. When your chicken is full cooked, dump out the water. Grab out your crock pot and add 8 cups of new water. Cut up all your veggies, you want them to be kind of chunky. Add in all your ingredients to the crock pot and let it simmer for a few hours until the veggies are soft.

Ingredients for dumplings

  • 2 cups of flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 3/4 cup of milk
  • 1/2 stick of butter

Directions:

30 minutes before you're ready to enjoy your soup, it's time to make your dumplings. You'll want to make sure your crock pot is simmering pretty good. Whisk together all of your dumpling ingredients and then plot a spoonful of the mixture into the crock pot. Let each little ball cook in the crock pot for about 30 minutes.
