Another quick healthy make ahead meal, is these easy grab and go breakfasts.

RECIPE DIRECTIONS

Heat oven to 400.
Spray two muffin pans with non stick spray.
In bowl, combine the following to make 24 muffins:

  • 6 eggs
  • Frozen spinach, thawed and drained
  • 1 onion
  • Bell peppers
  • Browned Ground Turkey
  • Salt to taste using, garlic powder, salt, and pepper
  • Mozzerella cheese.

Combine eggs, frozen spinach, ground turkey, onion, and chopped bell peppers in bowl. mix in garlic salt, salt, and pepper, or other seasonings for a different flavor, such as taco mix.

Pour mixture into greased muffin pans, sprinkle top with just a teaspoon of finely shredded mozzarella cheese.

I store these in my fridge for the week. Then the kids can just heat them up for 30 seconds in the microwave, and have a delicious healthy breakfast, or serve them with brown rice, that I've got prepared to add to any meal in a flash.

BROWN RICE REPLACES POTATOES AT MY HOUSE

Changing a persons lifestyle of eating doesn't have to be NON tasty!. I've added home cooked brown rice to just about every recipe, replacing the carb heavy potatoe.

If you have some brown rice ready to go, it's easy to add a grilled piece of chicken, salmon, or pork chop, with a side of veggies or side salad.  Tasty and delicious. That's not diet food!

NOTE: You can buy bags of brown rice for under $3. I make 3-6 cups of rice for the week at one time, it's easy and only takes 20 minutes, a boiling pot of water and rice. That's it!
