This Chicken Dish Is Seriously Next-Level Delicious
Last week, my boyfriend was so excited about a new dish he had created that he wanted me to taste-test it with my co-host. We did try it, and thought it was super!
But...what was in it? We knew the obvious ingredients: chicken, rice, and dill. But there was a bit of heat as an aftertaste. I enjoyed it so much that I ate the rest for lunch that day.
It was SO delicious that he made it for me again over the weekend, and let me take pictures so I could share it with you. I can tell you that it was great as leftovers, but when it's freshly made, it's absolutely amazing, so we made it together and wanted to share it with you.
The original recipe that he found was a deep-fried chicken recipe. Darin converted it to a baked chicken recipe, and it includes a special marinade that makes it extra special.
WHAT YOU'LL NEED
- Pickel Brine
- Cream of Chicken Campbell's Soup
- Curry
- Cumin
- Chicken Broth
- Dill
- Hot Sauce
- Bourbon
- 2 Chicken Breasts
- Jasmine Rice
- Pam Spray

CREATE YOUR CHICKEN BRINE
First, you'll want to take two chicken breasts. Clean them, and then take a knife to them to remove any fat, and to score one side of the chicken.

PREPARE CHICKEN
Score the entire piece of chicken, and then we will place both chicken breasts in pickle brine overnight. (Yeah! Dill pickle brine to be exact. Let the scored chicken breast marinate overnight, and be ready for chicken magic when you decide to complete the recipe.
SPECIAL SAUCE
- 1 can Cream of Chicken Soup (Campbell's)
- 2 Tsp Curry
- 1 Tsp Cumin
- 1/4 Cup Chicken Broth (Or for a twist, Beef Broth)
- 1 Tbsp Dill
- 5 Shakes Hot Sauce (or to taste)
- 2 ounces Bourbon (Secret Ingredient)
Mix the ingredients until the sauce is smooth.
Heat the oven to 350.
PREPARE YOUR BAKING DISH
- Spray PAM cooking spray on the bottom and sides of your baking dish.
- Take the special sauce and cover the bottom of a baking dish with it. Place your two pieces of chicken breast, scored side down, on top of the sauce.
- Take the remainder of the sauce and pour it over the top of the chicken until completely covered.
- Bake uncovered in the oven for 35 minutes.
- Once the chicken has been baked, remove it from the oven.
- We used one bag of already prepared Jasmine rice. We heated it up in the microwave and then divided the bag between two plates. Use a fork to fluff it up.
- Place one piece of chicken on top of each bed of rice, and then pour the rest of the sauce on top of the chicken breasts equally. Serve and enjoy!
