This is the recipe for the 'Baked Cheesy Cauli Tots" we talked about earlier this morning on the Get Up & Go Show. Thanks to Tim Lyon for sharing this awesomeness with us!

Baked Cheesy Cauli Tots

INGREDIENTS:

Cauliflower, 3 cups, steamed and chopped/grated -- 125 calories (I used fresh)
1/2 c shredded cheddar – 220 ( I used Co-Jack)
1/2 c grated Parmesan cheese – 160 ( I used and Italian Cheese blend and a little Parm from the can)

Panko breadcrumbs,  1 c -- 200
Eggs, 2 -- 160
Minced dry onion – 0 (I used fresh)
Salt and pepper, generous
Italian seasoning, generous ( I went light on this)
Garlic, minced (I used garlic salt)
Season Salt

Combine everything in big bowl. Pack into sprayed 24-count mini muffin pan equally and bake at 400 for 15+ minutes until GBD (golden brown delicious).

TOTALS -- 865 calories for all 24 tots
433 calories for 12 tots
217 calories for 6 tots

Dipping sauces -- Honey mustard and Walden Farms calorie-free mayo, combined, and/or Ketchup!
