Okay.  I know you've seen this delicious combination at wonderful restaurants.  But if you'd like to have a more healthy version, try making it at home, with a whole grain waffle, and controlled portions. Did I say...Controlled...Yes!  Who needs two waffles the size of your rear end?  Nobody. This recipe is for one perfect serving, and can be ready in less than 7 minutes.  Duplicate the recipe for everyone in your house for a super great start to any day, with just the right balance of protein and carbs to keep a body going.

Ingredients

(Serves one. Duplicate as needed.)

  • 1 Whole Grain Waffle
  • 2 pieces of Canadian Bacon
  • 1 slice of thin sliced sharp cheddar cheese
  • 2 tablespoons of maple syrup
  • 1 egg
  • 2 tablespoons of olive oil, or 1 tablespoon of butter
  • salt and pepper to taste

How to Make It:

Heat a nonstick skillet or saute pan over medium heat. Cook an egg, salt and pepper to taste.  Cover the pan to heat the egg completely, and flip over to cook other side.

While the egg is cooking, put a whole grain waffle in the toaster, and heat the Canadian bacon for a minute in the microwave, just until warm.

If you like your eggs runny, that's fine, but I find that the finished product is easier to eat if both sides are cooked and the yolk is tender, but not runny. Once you flip the egg, put the piece of thinly sliced sharp cheddar cheese on the egg, and let melt slightly.

Top waffle with Canadian bacon, place the egg and cheese on top of the Canadian bacon, top with a drizzle of maple syrup, approximately 2 tablespoons.  Believe it or not, 2 tablespoons is just right.   Season with salt and pepper if necessary.
