I've heard great things about kale. Mostly that it's good for you. So when I saw a frozen package of kale in the store yesterday, I grabbed it. Just because it was kale. I had no idea what to do with it. I've since been online checking it out, and here are a few things to do with kale, just in case you are also in need of direction.

1. The first thing I discovered is that fresh kale is really the way to go. Oh well. Too late. I've got the frozen stuff. Now what?

2. IF I had picked up fresh kale, I could have made baked kale chips with it. People rave about kale chips. You simply wash and cut the kale into bite sized pieces, toss with some olive oil and seasoning salt, and throw it on a cookie sheet in a 350 oven for about 10-15 minutes.Sounds yummy!

3. Since I didn't pick up fresh kale, I'm going to use mine just as I would chopped spinach. In an omelet, soups, stir-fry and sauteed as a side for just about anything.

Easy, really. And good for you. But next time I'm buying the fresh stuff.
