Now that the weather is colder, we Minnesotans are putting away the grills and turning away from lighter summer fare and turning to a more hearty, stick-to-your-ribs kind of meal. Here is an easy recipe for stuffed green peppers that's actually healthy, too! 

4 Large green peppers

1 Pound of lean ground beef (I use 96/4)

1 Cup of Minute Brown Rice

1 16 oz jar of lower sodium pizza sauce

2 Cups grated fat-free mozzarella cheese

Oregano, basil, garlic, onion powder, pepper and sage

Preheat oven to 350.  Wash peppers and slice off tops.  Remove seeds and membranes. Arrange peppers in an 8X8 casserole pan. Brown ground beef and cook rice according to package directions. Combine ground beef, rice, pizza sauce and one cup of cheese in a bowl. Add oregano, basil, garlic, onion powder, pepper and sage to taste. Spoon mixture into peppers and lightly press mixture to the bottom of the pepper. If necessary, lightly tap the pepper on the counter to get rid of excess air in the bottom. Repeat until all of the peppers are full. Bake peppers for 40 minutes or until mixture is bubbling around the edges. Remove from oven and sprinkle remaining cheese onto the peppers and bake for another 5 minutes or until cheese is golden brown.

I like to add a tossed Cesar salad as a side dish.
