I am no Martha Stewart. I have proven that time and time again. But in an attempt to eat healthier and drop a few pounds I found a recipe for cauliflower crust pizza. The internet told me that it tastes just like regular pizza but with fewer carbs, I figured why not give it a go! To my surprise it wasn't bad and super easy to make! Here is the recipe I used. Keep in mind I cut the recipe in half and it gave me 8 mini pizzas.

Ingredients:

-1 head of cauliflower
-2 large eggs
-3 cups of shredded mozzarella cheese
-1 teaspoon of dried oregano
-2 teaspoons of garlic powder
-1 cup of pizza sauce
-Enough pepperoni slices to satisfy your needs or other pizza toppings you enjoy

Step 1: Heat oven to 450 degrees. Using a grater or food processor (I used a food processor and it worked slick) shred cauliflower into fine crumbles. About 3/4 of a head of cauliflower made 8 good sized mini pizza crusts for me.

Step 2: Cook the cauliflower in the microwave *in a microwave safe bowl* for 8 minutes, take out and let cool for 10 minutes. USE OVEN MITTS TO TAKE IT OUT OF THE MICROWAVE! Can not emphasize that enough.

Step 3: Add eggs, 2 cups of shredded mozzarella cheese, and spices to the cauliflower and mix it well. I also added a half a cup of cheddar cheese because I love cheese.

Step 4: Lightly grease a baking sheet and divide the cauliflower mixture into mini pizza crusts on the pan. Or just make one big crust. Totally up to you, get creative with it!
Bake these in the oven until golden brown. The edges might get a little crispy but that's totally fine. They still taste good.

Step 5: Remove from oven and turn on Broiler. Add desired pizza toppings and place back in the oven until the toppings are hot and melty.

Step 6: Remove from oven, let cool a few minutes and enjoy!
